These dense muffins are great with a cup of coffee! They quickly outranked any banana muffin our family could taste!
Makes 12 muffins or 48 mini muffins
3 cups all-purpose flour
1 tsp. baking soda
1 tsp. salt
1 Tbs. ground cinnamon
2 cups frozen whole strawberries, thawed and pureed.
1 Tbs. vanilla extract
3 large eggs, beaten
2 cups granulated sugar
1 1/2 cups vegetable oil
Preheat oven to 350. Line muffin pan with liner cups or spray non-stick spray on pan. In a large bowl, mix flour, baking soda, salt and cinnamon. Set aside. In another large bowl, beat together strawberries, eggs, sugar and oil until incorporated. Fold in the dry mix until smooth. Scoop into muffin pan(s). Bake mini muffins 15 minutes/muffins 35 minutes or until toothpick inserted in center comes clean. Cool on wire racks.
