Our family doesn’t care for nuts and it’s hard to find a muffin at a bakery that doesn’t add them, so ..we made our own!
Makes 12 muffins or 48 mini muffins
1 1/2 cups all-purpose flour
1 tsp. baking powder
1/2 tsp. salt
3 large ripened bananas, mashed
3/4 cup granulated sugar
1 large egg
1/3 cup margarine, melted
Preheat oven to 350. Coat muffin pan with non-stick spray or use baking cup liners. Mix flour, baking powder and salt in medium sized bowl. Set aside. In large bowl, combine banana mash, sugar, egg and margarine. Whisk until incorporated. Fold in dry ingredients until mixture is smooth. Scoop into muffin pan(s). Bake mini muffins for 15 minutes/muffins for 35 minutes or until pushing down on muffin causes spring back.
