This is a strawberry lover’s dream. It tastes a lot like a cheesecake, takes a fraction of the time to make and keeps for up to a week! I only have a few memories of my Mom and this was one of them!
Makes 8 servings: 477 calories per serving
Ingredients
1 roll pillsbury sugar cookie dough
8 oz. cream cheese
1/2 cup granulated sugar
1/2 teaspoon vanilla (extract or imitation)
1 package strawberry glaze (usually in the fresh vegetable section of a grocery store)
1 quart fresh strawberries, stemmed and sliced thin
Method
remove package from cookie dough and press a thin layer around the edge of a pizza pan (shown is a 16 inch pizza pan which makes thin crust, for thicker crust use smaller pan). Preheat oven to 350 and bake about 10-12 minutes (yes, it takes that long!).
While baking, add cream cheese, sugar and vanilla in medium sized bowl and beat (with beaters or wooden spoon) until easily spreadable and fully mixed.
Once giant cookie is done cooking, let rest until it’s room temperature (or throw it in the fridge for about 10 minutes and it will be cold and ready to use!).
Spread creamy cheese mixture over cookie with spatula leaving edges open for “pizza type crust” look. Then pour glaze in center of pie and spread outward with spatula until covered evenly. Smother the top of the pizza with sliced fresh strawberries.
This is ready to serve immediately. Cut it just like you would a pizza with a pizza cutter or big knife, into 8 slices. Enjoy! This dish can also be refrigerated and keeps up to 1 week.
