Although this is not the best picture, my Dad loves when I make this simple dish for him for lunch. Packed with protein, it’s very filling and super easy to make!
Makes 2 servings
Ingredients
1 small Shallot, thin sliced
1 tsp. minced garlic
14.5 oz. can butter beans, rinsed, drained and patted dry
1 bratwurst sausage, sliced 1/4″ thick*
pinch kosher salt
1 tsp. garlic pepper
1/2 Tbs. unsalted butter
Method
In medium sized frying pan on medium high heat, arrange sausage slices to cover pan, face up. Cook 3-4 minutes. flip sausages. Cook additional 3-4 minutes or until completely cooked through and no pink remains. Add shallot and garlic. toss and saute 2 minutes. Add beans, butter, salt and garlic pepper. Saute about 3-4 minutes on each side, tossing until Butter beans get a nice brown “crisp” color to them. Remove to plate and serve!
Tips:
*to help cut bratwurst, freeze for about an hour to help firm up the meat to ease, otherwise it could end up a gooey balled mess instead!
