Cutting a few corners, this dish is surprisingly easy to make with the help of a crock pot! If you don’t have time, make it on the stove in a dutch oven and it’s just as good!
Makes 6-8 servings
Ingredients
15 oz. can black beans
16 oz. frozen corn
1 can campbell’s tomato soup
2 lbs. ground turkey
2 Tbs. chili powder
1 Tbs. garlic pepper
1 cup diced baby carrots
1 shallot, minced
Method
Crockpot
Drain and rinse black beans in strainer. Add all ingredents and cook on low for 8 hours or high for 4 hours.
Stovetop
With a splash of olive oil or nonstick cooking spray in a dutch oven, brown turkey until half way cooked and then add shallot, chili powder and garlic pepper. Cook until turkey is completely cooked. Add diced carrots and tomato soup + 1 can of water. Stir and bring to an early boil. Add frozen corn and black beans. Bring to full boil, cover and simmer for 20 minutes.
