Cobblers are very easy and very delectable! I cut the sweetness of mine with butter pecan ice cream served on the side.
Ingredients
1/2 c. granulated sugar + 1 Tbs. for topping
1 Tbs. corn starch
1/4 tsp. cinnamon
4 c. fresh peaches, pitted and sliced 1/4 inch thick
1 tsp. lemon juice
1 c. flour
1 1/2 tsp. baking powder
1/2 tsp. kosher salt
3 Tbs. shortning
1/2 c. milk
Method
Preheat oven to 400 degrees. In large sauce pan, combine 1/2 c. sugar, cornstarch and cinnamon. Whisk to mix evenly. Add peaches and lemon juice. Fold until peaches are covered with dry mixture. Turn on heat and cook on medium high heat until bubbly. Boil 1 minute further. Pour into ungreased 2 qt. casserole. Keep hot in oven while preparing next step.
In medium mixing bowl, combine flour, 1 Tbs. sugar, baking powder and salt. Mix thoroughly with whisk. Cut in shortning until crumbled. Add milk until completely incorporated (like a dough ball). Mold ball into shape to cover top of casserole and lay over top of peach mixture in oven. Bake 20-30 minutes until top is golden brown.
Let cool at least 30 minutes before serving. Enjoy!
