My children call these “german pancakes” although they are actually crepe cakes. My mother always made these for us when we were kids and now I make them for mine!
Yields: 8 crepe cakes
Ingredients
1 cup fat free milk
1 cup all purpose flour
1 large egg
1/2 cup granulated sugar
1/2 tsp. cinnamon
1 Tbs. margarine
Method
In small bowl, combine cinnamon and sugar. Set aside.
In medium bowl, add milk, egg and flour. Whisk until smooth.
In medium frying pan, melt margarine over medium high heat, coating bottom of pan. Add 1/4 cup of batter to middle of pan and give a slight shake until thin and spread out. Let cook about 30-45 seconds. Flip. Cook an additional 30 seconds. Remove to plate and repeat. Sprinkle with cinnamon sugar and serve!
The picture above shows thin banana slices added. Any fruit can be added to give this sweet breakfast treat a little more texture. Apples and peaches are my family’s favorites!
