Very healthy and delicious! Lentils are such a versatile bean, they go with practically anything!
Makes: 4 1-cup servings
Ingredients:
2 cups cooked lentils (follow bag instructions)
1 diced roma tomato
1/2 diced medium vidalia onion
2 Tbs. garlic pepper
2 cups raw baby spinach
1 cleaned and diced sweet potato (small to medium)
1 medium zucchini, diced
Method:
In large frying pan, add tomato, onion, sweet potato, zucchini and garlic pepper. Saute over medium heat about 10 minutes or until all veggies are cooked al dente. Add lentils and spinach. Cook about 1 minute more until spinach is wilted. Serve.
