Pizza is always fun! The perfect slumber party dinner, have the kids make their own pizzas with assorted toppings!
Ingredients
1 cup shredded mozzarella cheese
1/4 cup marinara sauce (I cheat and use Ragu 6 cheese)
1 yellow bell pepper, cleaned and julienne sliced
3 oz. button mushrooms, sliced
1 small zuchinni, diced
1 cup spinach leaves
1/4 cup diced red onion
1 premade thin pizza crust
1 Tbs. olive oil
1 Tbs. garlic pepper
1 Tbs. soy sauce
1 tsp. lemon pepper
Method
Preheat oven to 400. In a small bowl, toss bell pepper with 1 Tbs. olive oil and garlic pepper until coated. Remove pepper slices and flatten on cookie sheet leaving room for other vegetables. Add zuchinni to left over oil mixture and toss, adding to cookie sheet next to peppers. In another small bowl, add mushrooms and soy sauce until coated, place next to zuchinni on cookie sheet. Next, coat diced onion with remainder of soy sauce and line up with other vegetables. Place in oven and bake for 7-10 minutes until vegetables are softened.
Meanwhile, lay out pizza crust on pizza pan and smother on sauce with backside of a spoon. Cover sauce with spinach leaves trimmed of stems. Sprinkle with lemon pepper.
Once vegetables are done cooking, remove from oven, leaving oven at 400. Sprinkle vegetables over pizza and then cover all with cheese.
Slide pizza into oven and cook for about 10-15 minutes until cheese is fully melted.
Makes 1 pizza.
