When we first found out my husband was diabetic, it took some altering of our diet to compensate for his health. This is his favorite dish now!
Ingredients
6 oz. fresh pink salmon
1/4 tsp. crushed fresh rosemary (you can use dried, but crush it!)
Pinch garlic pepper
non-stick cooking spray olive oil
2 grape tomatoes
1 small cucumber, sliced
2 leaves romaine, chopped into bitsized pieces
8 oz. thin fingerling asparagus
Heat frying pan. Spray salmon with cooking spray on both sides and rub on rosemary. Lay in hot pan and cook about 4 minutes each side, or until cooked through.
In 2 quart sauce pan, boil 2 cups water. Once boiling, drop in asparagus and cook about 5 minutes or until to desired doneness (I like mine al dente). Remove from water and place on plate, sprinkling with garlic pepper.
Add salmon to plate.
Assemble small salad with romaine, tomatoes and cucumber.
Makes 1 serving.
