Makes: 1 serving
4 ounces snow peas
4 oz. salad shrimp, deveined and no tail
2 radishes, thinly sliced into half-moons
1 scallion, thinly sliced
2 Tbs. rice vinegar
1 tsp. toasted sesame oil
1 tsp. grated fresh ginger
5 grape tomatoes
Steam snowpeas in steamer basket about 5 minutes. Run under cold water and then slice diagonally, clipping ends that are not edible (brown stringy things).
Add snowpeas, radishes, salad shrimp and onion to bowl. Toss loosely.
In small dish, combine vinegar, oil and ginger. Mix well. Pour over vegetables.
Top salad with tomatoes and serve!
