I made these for my son’s birthday party at school. They were a huge success with the 6 year olds!
Ingredients
1 box funfetti cake mix (with ingredients on box to make it)
1 tub blue colored frosting (or white with blue food coloring added)
1/4 cup white icing (or cheat and use pilsbury easy icing, it’s in a spray can and already has the piping tool you need on the end)
1 package sour patch kids candy strips
cupcake confetti (optional)
paper muffin cups
Method
Using muffin cups, cook cupcakes as funfetti box directs. Meanwhile, empty blue frosting into a bowl and beat on medium to high for 2 minutes. It will lighten and also make the consistency easier to spread. Set aside.
Cool cupcakes and get ready to frost (you can fast cool them in the fridge in 20 minutes or less).
Cut sour patch strips in half. You will find they are very pliable and easy to bend.
Frost cupcakes with blue frosting. Then add “rainbows”. After done adding rainbows, pipe “clouds” around base of each rainbow with icing. Sprinkle with confetti. Makes about 24 cupcakes
