These little monsters are delicious and can be frozen! That means breakfast is just popping a few out of the freezer, warming in the microwave and eating!
Makes 6 servings (6 quiches): 110 calories per serving
Ingredients
4 large or extra large eggs
8 oz. frozen spinach, thawed and squeezed of water
1 baby bell pepper, diced
1/2 cup finely shredded sharp cheddar cheese
non stick cooking spray
Method
Preheat oven to 350. Spray a muffin pan with non stick cooking spray. In a medium sized bowl, whisk eggs until just frothy. Add peppers, spinach and cheese, mixing to incorporate. Scoop into muffin holes about 2/3 full. Bake for about 20 minutes.
To remove quiche, let rest for 10 minutes on stove top. Using a butter knife, loosen up the edges around each quiche and pop out with butter knife. Serve immediately or wrap with clear plastic wrap (or toss in resealable sandwich bags) and put in freezer.
